Crockpot Grains
- 1/4 cup millet 1 1/2 oz, uncooked
- 1/4 cup pearl barley 1 1/2 oz, uncooked
- 13 cup brown rice 2 oz, uncooked
- 1 cup onions chopped
- 1 cup green bell peppers chopped
- 1/2 cup carrots finely chopped
- 1 each red kidney beans canned, drained
- 8 ounces tomato sauce
- 1 pound tomatoes canned, chopped, drained, reserve liquid
- 1 1/2 cup corn canned, drained or frozen
- 1 teaspoon oregano dried
- 1 teaspoon basil dried
- 1/2 teaspoon garlic powder
- 1 x salt to taste
- 1 x black pepper to taste
- Combine all ingredients in a crockpot.
- Add water to reserved tomato liquid to equal 2 1/2 cups.
- Stir into grain mixture.
- Cover and cook on low setting 8 hours.
- Stir before serving.
- Serves 8 as a side dish and 4 to 6 as a filling main course.
- You can use any combination of grains.
- Just use about 1 cupful altogether.
