Green Chile Pickle Relish
- 3 poblano chiles
- 3 dill pickles, finely diced
- 1/4 cup finely chopped red onion
- 3 tbsp fresh lime juice
- 2 tbsp honey
- 3 tbsp olive oil
- 1 salt to taste
- 1 pepper to taste
- 3 tbsp finely chopped cilantro leaves
- Preheat the grill to medium high.
- Place the chiles on the grill and grill until the skin is blackened on all sides, about 5 minutes.
- Remove from the grill and place in a paper bag and let sit for 15 minutes.
- When the chiles are cool enough to handle, peel, seed, and finely chop them.
- Combine chiles and all the rest of the ingredients in a medium bowl and season with salt and pepper.
- Let sit at room temperature for 30 minutes before serving so that the flavors meld.
