Green Chile Pickle Relish

  1. Preheat the grill to medium high.
  2. Place the chiles on the grill and grill until the skin is blackened on all sides, about 5 minutes.
  3. Remove from the grill and place in a paper bag and let sit for 15 minutes.
  4. When the chiles are cool enough to handle, peel, seed, and finely chop them.
  5. Combine chiles and all the rest of the ingredients in a medium bowl and season with salt and pepper.
  6. Let sit at room temperature for 30 minutes before serving so that the flavors meld.
