Baked Greek Zucchini
- 3 cups zucchini, finely diced
- 1 cup Bisquick baking mix
- 12 onion, chopped
- 12 cup parmesan cheese, grated
- 2 tablespoons parsley
- 12 teaspoon salt
- 12 teaspoon oregano
- 1 garlic clove, minced
- 12 cup vegetable oil
- 4 eggs, beaten
- 8 ounces feta cheese
- Mix first 9 ingredients.
- Add eggs and the feta cheese to the mixture and blend well.
- Spread into a buttered 9 X 13 X 2 inch pan and bake at 350 degrees F. for 40 minutes.
- Cool slightly and cut into serving size pieces.
- Serve warm.
