Oat Bran and Dried Fruit Muffins

  1. Preheat oven to 400 degrees F. Spray or line muffin tin with paper liners.
  2. In a food processor combine the 8 ingredients (dried fruit - cinnamon).
  3. Pulse until mixture is blended and then transfer to a bowl.
  4. In another bowl combine the remainder of the ingredients (milk - orange peel).
  5. Add the milk mixture to the dried fruit mixture and stir to blend.
  6. spoon batter into the muffin cups, filling 2/3 full.
  7. Bake for 15 minutes or until muffins are done.
  8. Remove to a rack and let cool 10 minutes before serving or store in an airtight container for up to 3 days or freeze.
