Chicken Ala Marta Recipe
- 3/4 c. Italian seasoned fine dry bread crumbs
- 1/4 c. grated Parmesan cheese
- 6 whole chicken breasts, skinned, split and boned (or possibly thighs)
- 1/2 c. sliced green onion
- 4 tbsp. butter
- 4 tbsp. flour
- 2 c. lowfat milk
- 2 (10 ounce.) pkg. frzn minced spinach, thawed and liquid removed
- 2 (4 ounce.) pkg. boiled ham slices, diced
- Combine bread crumbs and cheese; coat chicken lightly.
- Arrange in 9x13 inch baking dish.
- Cook onion in butter till tender.
- Blend in flour; stir in lowfat milk all at once.
- Cook till thickened.
- Cook and stir 1 minute more.
- Stir in spinach and ham.
- Spoon spinach mix over chicken; sprinkle with remaining crumb mix.
- Bake, uncovered, in 350 degree oven for 40 to 45 min.
- Serves 12.
