Spring Peas with Mint

  1. In a bowl, whisk the olive oil with the vinegar.
  2. Add the peas, red onion and mint and toss to coat.
  3. Season with salt and pepper and let stand at room temperature for 1 hour.
  4. Transfer to a platter and serve.
