Noodles in Oriental Tomato Broth
- 4 Tbsp. oil
- 2 bunches green onions, whites minced and green tops chopped
- chopped ginger (optional)
- 2 1/2 cups diced tomatoes
- 12 cups chicken stock
- 1/2 cup soy sauce
- Oriental chili paste (Sambal)
- sugar
- 4 Tbsp. sesame oil (optional)
- spaghettini pasta, cooked, drained
- Saute white part of green onion and ginger in hot oil in large pot for 30 seconds.
- Add tomatoes; saute 2 minutes.
- Add stock, soy sauce, chili paste and sugar.
- Bring to boil; simmer 1 minute.
- Adjust seasoning and add sesame oil.
- Place 6 oz (180 g) cooked noodles in each bowl.
- Divided hot broth between each bowl and garnish with remaining green onions.
- Serve immediately with extra soy sauce and oriental chili paste on the side, if desired.
