Sweet Potato Muffins
- 1 3/4 cups flour, all-purpose
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon ground
- 1/2 teaspoon ginger ground
- 1/2 teaspoon allspice ground
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup sweet potatoes, or yams cooked, mashed
- 1/4 cup sugar
- 3 tablespoons sugar
- 13 cup milk, skim
- 1 tablespoon milk, skim
- 3 tablespoons vegetable oil
- 1 each eggs
- 1 x nonstick cooking spray
- Combine first 7 ingredients in a bowl; make a well in cener of mixture.
- Combine potato and next 4 ingredients in a bowl; stir well.
- Add to dry ingredients, stirring just until moistened.
- Divide batter evenly among 12 muffin cups coated with cooking spray.
- Bake at 400F (200C) for 15 minutes or until a wooden pick inserted in center comes out clean.
- Remove from pan immediately; let cool on a wire rack.
