Moist, Healthy Meatloaf in the Crock Pot

  1. Mix first ten ingrdients and shape into a loaf.
  2. Refrigerate overnight (to let flavors blend).
  3. In the morning, spray crockpot bowl with non-stick spray.
  4. Slice tomatoes over the bottom of the crockpot, and gently set the refrigerated loaf on top of the tomatoes.
  5. Cook on low for 8-10 hours.
  6. Serve with salsa, if desired!
  7. Can be frozen.
