My Caper Vinaigrette
- 1 tablespoon capers (drained)
- 3 teaspoons Dijon mustard
- 1 tablespoon vanilla sugar
- 2 tablespoons red wine vinegar
- salt & fresh ground pepper (to taste)
- 14 cup olive oil
- Puree the capers, mustard, sugar, vinegar, salt and pepper.
- With the machine running, add oil slowly until emulsified.
