Lemon Basil Chicken

  1. Mix MIRACLE WHIP LIGHT, lemon juice, honey, and basil; season as desired with favorite salt-free seasoning.
  2. Place chicken on grill or on broiler pan sprayed with cooking spray.
  3. Broil or grill 4 min.
  4. on each side, or until cooked through, turning and brushing with dressing mixture.
  5. Brush peppers and mushrooms with 1/4 cup of the vinaigrette dressing.
  6. Place on grill over medium coals or on broiler pan under the broiler.
  7. Cook 8 to 10 min.

  9. Slice the vegetables lengthwise and toss with remaining 1/4 cup dressing.
  10. Pierce potatoes with a fork; wrap loosely in paper towels.
  11. Cook in microwave on high until soft.
  12. Split lengthwise and top each with 1 tsp.
  13. margarine and 2 Tbsp.
  14. sour cream.
  15. Enjoy 1/2 cup blueberries with 2 Tbsp.
  16. whipped topping and 1 Tbsp.
  17. almonds per serving for dessert.
  18. Serve meal with an 8 fl oz glass of water per person.
