Lemon Basil Chicken
- 1/4 cup MIRACLE WHIP Light Dressing Family Dollar $3.50 thru 02/07
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 Tbsp. honey
- 1/2 tsp. dried basil leaves
- 12 oz. boneless skinless chicken breasts (4 3-oz. breasts)
- 2 medium red peppers
- 4 fresh portobello mushrooms
- 1/2 cup SEVEN SEAS FREE Red Wine Vinaigrette Fat Free Dressing, divided
- 4 medium baked potatoes
- 4 tsp. trans fat free canola-based soft margarine
- 1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 2 cups fresh or frozen blueberries (thawed if frozen)
- 1/2 cup COOL WHIP FREE Whipped Topping
- 1/4 cup PLANTERS Sliced Almonds
- 32 fl oz (4 cups) drinking water
- Mix MIRACLE WHIP LIGHT, lemon juice, honey, and basil; season as desired with favorite salt-free seasoning.
- Place chicken on grill or on broiler pan sprayed with cooking spray.
- Broil or grill 4 min.
- on each side, or until cooked through, turning and brushing with dressing mixture.
- Brush peppers and mushrooms with 1/4 cup of the vinaigrette dressing.
- Place on grill over medium coals or on broiler pan under the broiler.
- Cook 8 to 10 min.
- or until tender, turning and brushing with vinaigrette.
- Slice the vegetables lengthwise and toss with remaining 1/4 cup dressing.
- Pierce potatoes with a fork; wrap loosely in paper towels.
- Cook in microwave on high until soft.
- Split lengthwise and top each with 1 tsp.
- margarine and 2 Tbsp.
- sour cream.
- Enjoy 1/2 cup blueberries with 2 Tbsp.
- whipped topping and 1 Tbsp.
- almonds per serving for dessert.
- Serve meal with an 8 fl oz glass of water per person.
