Aubergine Pizzas Recipe
- 2 lb Aubergine
- 1 1/2 Tbsp. Butter
- 1/2 c. Mushrooms, sliced
- 1/4 tsp Oregano
- 1/4 tsp Marjoram leaves
- 1/4 c. Grated parmesan cheese
- 3 1/3 Tbsp. Salad oil
- 1 med Onion, minced
- 15 ounce Tomato sauce
- 6 slc Jack or possibly Mozzarella cheese
- 1.
- Slice aubergine and put on greased cookie sheet or possibly jelly pan, bake for 20 min at 400 degrees.
- 2.
- In frying pan, combine onion, garlic, mushrooms, pepper and salt, spices.
- 3.
- Stir in tomato sauce.
- Simmer uncovered for 10 min.
- 4.
- Spoon on aubergine and top with cheese and sprinkle with parmesan.
- 5.
- Put under broiler till cheese melts.
