BBQ Pork Tenderloin with Pineapple Salsa
- 1 pork tenderloin (1 lb./450 g), trimmed Safeway 1 lb For $3.99 thru 02/09
- 1 Tbsp. Miracle Whip Calorie-Wise Spread
- 2 Tbsp. (1/4 of 35-g pkg.) 40%-less-sodium taco seasoning mix
- 1 cup fresh pineapple chunks
- 2 Tbsp. chopped fresh cilantro
- 2 Tbsp. finely chopped red onions
- 2 Tbsp. Kraft Calorie-Wise Zesty Italian Dressing
- 1 Tbsp. lemon juice
- 1 clove minced garlic
- 3 cups hot cooked brown rice
- Heat barbecue to medium heat.
- Brush meat with Miracle Whip.
- Sprinkle with taco seasoning.
- Grill 20 to 24 min.
- or until meat is done (160 degrees F), turning after 12 min.
- Remove meat from barbecue; cover with foil.
- Let stand 10 min.
- Meanwhile, combine all remaining ingredients except rice.
- Slice meat.
- Serve with pineapple salsa and rice.
