Apple Spice High Rise Muffins Recipe
- 3 c. flour
- 2 tsp baking pwdr
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp each of nutmeg and allspice
- 1/2 tsp salt
- 1 1/2 c. brown sugar
- 4 x egg whites
- 1 c. plain yogurt
- 1/3 c. oil (or possibly 1/3 c applesauce)
- 3 x apples, peeled and finely minced
- Preheat over 400F.
- Grease 12 muffin c..
- Using a fork stir flour with baking pwdr, baking soda, spices, salt and sugar in large mixing bowl.
- In another bowl whisk Large eggs with yogurt and oil.
- Stir in apples and nuts.
- Spoon batter into muffin c.. C. will be very full with batter heaped in middle.
- Bake 15-17 min.
- Leave in pan 5 min and then turn out.
- Makes a BUNCH but are great to freeze and pop into the microwave for great breakfast and desserts for TWO.
- Cooking a larger batch of most any recipe is the key to cooking for two!
- Using applesauce rather than oil will also make these a healthy alternative to regular muffins.
