Loaded Potato Salad

  1. Dice potatoes, toss with cooking oil.
  2. Then place them on a sheet pan and place in a 350F oven until tender.
  3. (30-40 minutes)
  4. Remove potatoes from oven and allow to cool completely.
  5. To make the dressing:
  6. Combine sour cream, mayonnaise, green onions, salt and pepper.
  7. Then whisk thoroughly to combine.
  8. Fold cheese and crumbled bacon into the dressing.
  9. Place cooled potatoes and completed dressing in a bowl and gently combine.
