Loaded Potato Salad
- 2 lb Potatoes, diced
- 2 tbsp Cooking Oil
- 1/2 cup Sour Cream
- 1/4 cup Mayonnaise
- 2 each Green Onions, chopped
- 1 tsp Salt
- 1 tsp Black Pepper
- 1/2 cup Cheddar Cheese, shredded
- 1/2 cup Bacon, crumbled
- Dice potatoes, toss with cooking oil.
- Then place them on a sheet pan and place in a 350F oven until tender.
- (30-40 minutes)
- Remove potatoes from oven and allow to cool completely.
- To make the dressing:
- Combine sour cream, mayonnaise, green onions, salt and pepper.
- Then whisk thoroughly to combine.
- Fold cheese and crumbled bacon into the dressing.
- Place cooled potatoes and completed dressing in a bowl and gently combine.
