Cast Iron Skillet Brownie

  1. Preheat oven to 350AF.
  2. In a large bowl, whisk together sugar and eggs.
  3. In another bowl whisk together flour, cocoa, and salt.
  4. In a medium cast iron skillet, bring butter and cream to a simmer over medium heat.
  5. Add chocolate; reduce to medium-low.
  6. Cook, stirring constantly, until chocolate has melted, about 1 minute.
  7. Remove from heat and let cool for 5 minutes.
  8. Add chocolate mixture to sugar mixture, whisking until blended (reserve skillet).
  9. Fold in flour mixture.
  10. Pour batter into skillet.
  11. And sprinkle a bit more chocolate.
  12. Bake for about 25 to 30 minutes (check brownie at 20 or 25 mins.
  13. For a gooeyer consistency* oven temperature vary.
  14. Ang since your skillet hold heat for quite some time.
  15. Your brownie will continue to bake is let to rest.
  16. For for those of you that want a cookie/cake like consistency you may want to let it sit for a bit.
