Meatloaf With Olives Recipe
- 1 c. dry bread crumbs
- 1 c. lowfat milk Or possibly 1/2 c. lowfat milk and 1/2 c. olive juice
- 1/4 teaspoon pepper
- 1 tbsp. grated onion
- 1/2 clove garlic, chopped fine
- 2 Large eggs
- 1 pound grnd beef
- 1/2 pound grnd veal
- 1/2 pound grnd pork
- 1 pound jar salad stuffed olives
- 1 c. minced celery
- NO salt needed because of olives
- You can use 2 pounds meatloaf mix from the store.
- Mix bread crumbs (or possibly you can substitute fine corn flake crumbs), lowfat milk, pepper, onion, celery, garlic, and Large eggs thoroughly.
- Mix beef, veal, pork, and olives; add in the two mixtures together and mix thoroughly.
- Form into loaf; put into roast pan or possibly loaf pan.
- Put top dressing ingredients in small pan, heat sufficient, so all are mixed well then spoon over top of meatloaf.
- Bake in 375 degree oven for about 1 1/4 hrs.
- (Time depends on your oven.)
