Chicken Mustard Marinade Recipe
- 1/4 c. Dijon mustard
- 1/4 c. whole seed mustard
- 1/4 c. warm German mustard
- 1/4 c. distilled white vinegar
- 1/4 c. extra virgin olive oil
- 1/2 c. unsweetened apple juice
- Juice of 1/2 lemon
- 1 whole shallot, sliced in rings
- Freshly grnd pepper
- chicken cutlets
- Combine all ingredients in a bowl.
- Whisk to emulsify, Marinate chicken cutlets 1 to 3 hrs (or possibly more) before grilling.
- Grill chicken over medium-warm coals, cook the chicken 6 to 7 min per side.
- Spoon the marinade over the grilled chicken as a sauce, if you like.
