Ray's' Blackberry Cappuccino Crumb Cake
- 1 stick melted unsalted butter
- 1 1/3 cup flour
- 1/4 cup oatmeal
- 1 tsp cinnamon
- 2 tbsp granulated sugar
- 1/3 cup Brown sugar
- 1 tbsp instant cappuccino mix
- 2 eggs
- 2 tsp vanilla extract
- 2 cup flour
- 2 tbsp milk
- 1/2 cup sour cream
- 1 1/2 cup blackberrys
- 1 cup Brown sugar
- 2 tbsp granulated sugar
- 3 tbsp instant cappuccino
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 1/2 stick softened unsalted butter
- 3 tbsp powder sugar
- 1 tbsp water
- preheat oven to 350..spray a spring form pan well and set aside
- Make crumb topping by adding all ingredients together mix well till u get a good crumble.
- set in fridge while u make cake
- Cake: Add all dry ingredients together set aside.
- Add softened butter, sugars together cream well till nice & fluffy, add in vanilla and eggs and mix well, now add in flour mixture slowly, add in sour cream & milk till all incorporated.
- Now incorporate berries gently stir in.Add to pan & top with crumb mixture bake 55-65 minutes
- You can top with ice cream, whip cream or sugar drizzle
