Spicy and Salty Squid
- 34 lb fresh squid or 12 lb squid, slices
- 1 egg
- 12 teaspoon salt
- splash sesame oil
- 1 pinch white pepper
- 3 tablespoons cornstarch
- 2 tablespoons oil, separated
- oil (for frying)
- 5 tablespoons soy sauce
- 4 garlic cloves, minced
- 2 shallots, minced
- 1 small red chili pepper, thinly sliced
- Peel off the skin of fresh squid and gut; clean thoroughly.
- Cut the squid into thick strips.
- Set aside and drain.
- Place squid in a bowl, add egg, salt, sesame oil, white pepper, 3-tbsp cornstarch and 1-tbsp oil and soy sauce.
- Mix well.
- Heat up a pot with oil.
- Deep-fry squid with maximum heat until crispy.
- Remove and put aside.
- In a wok, stir-fry garlic shallots, and red chili in 1 tablespoon oil.
- Reduce the heat, place the deep-fried squids in wok.
- Season with salt and serve right away.
