Breaded Lamb Chops

  1. Heat broiler.
  2. Mix butter and mustard in shallow dish until blended.
  3. Combine bread crumbs and herbs in separate shallow dish.
  4. Spray rack of broiler pan with cooking spray.
  5. Dip chops, 1 at a time, in butter mixture, then in crumb mixture, turning to evenly coat both sides of each chop with each ingredient.
  6. Place on prepared broiler pan.
  7. Broil, 4 inches from heat, 5 to 6 min.
  8. on each side or until done (160F).
