Rocco's Almost Everythings in it Looseleaf Salad
- 1 1/2 cup mixed looseleaf lettuce (heaping)
- 2 tbsp green onion ( diced )
- 2 tbsp freshe broccoli stems ( diced )
- 2 tbsp yellow onion ( diced )
- 2 tbsp yellow pepper ( diced )
- 2 tbsp chopped broccoli tops
- 2 tbsp chopped or shredded or sliced provolone cheese
- 2 tbsp shredded cheddar
- 2 tbsp shredded motzarella cheese
- 2 tbsp shredded carrot
- 4 slice spicy pepperoni cut into strips
- 2 tbsp roasted sunflower seeds
- 5 italian parmesan crouton broken into pieces ( recipe on my profile )
- 1/2 cup extra virgin olive oil
- 1/8 cup golden balsamic vinegar
- 4 tbsp parmesan cheese
- for the salad:
- layer ingredients in order that they are listed
- for the dressing:
- wisk all ingredients together well.
- immediently drizzle alllll over salad..
- serve!
- HINT: I don't like a strong vinegar flavor so I don't put a lot of vinegar.. if u like a strong vinegar flavor increase vinegar to 1/4cup...
- HINT: I don't like an overload of dressing but if u like a lot of dressing double the dressing ingredients..
- HINT: any ingredient can be omitted or swapped out if u don't like them.
- example: yellow pepper for green, yellow onion for purple.. etc..
- this makes a salad for one as a meal or 2-3 as a side salad.
