California Quiche (California Quickie) Recipe
- 1 lb Summer squash, minced, (about 2 med.)
- 1/2 x Onion, thinly sliced Egg substitute equivalent to 4 Large eggs, (I used Egg Beaters)
- 1 c. Grated fatfree cheese, (cheddar is nice, or possibly Swiss for a milder flavor), up to 2/ - 2
- 1/2 tsp Oregano
- 1/2 tsp Basil Salt and pepper to taste
- Steam squash and onion about 15 min.
- Don't oversteam.
- Drain well.
- Meanwhile beat Large eggs; add in grated cheese, oregano, basil, salt and pepper.
- Mash squash, do not puree as chunks are good; add in to Large eggs.
- Pour into a Pam sprayed baking dish and bake covered in 325-350F oven till set - 30 to 40 min.
- Serves 4.
- VARIATION: Add in tofu or possibly any leftover cut up food.
