Chicken With Long Rice Soup Recipe
- 1 1/2-2 1/2 pound frying chicken
- 2 1/2 teaspoon salt
- 1 (4 ounce.) bundle long rice
- 1/4 teaspoon white pepper
- 3 (1/2") slices ginger root
- 4 c. water
- 1/2 c. minced green onion
- Cover chicken with water.
- Add in ginger and 1 tsp.
- salt.
- Simmer till chicken is tender (45-60 min).
- Cold.
- Bone chicken and cut into bite-size pcs.
- Cover long rice with hot water and let stand 1/2 hour, drain and cut in 4 inch lenths.
- Remove ginger from broth.
- Add in long rice, green onion, remaining salt, pepper and chicken.
- Bring to a boil and simmer 10 min.
- Garnish with additional minced onion, if you like.
- Serves 8-10.
