Chicken With Long Rice Soup Recipe

  1. Cover chicken with water.
  2. Add in ginger and 1 tsp.
  3. salt.
  4. Simmer till chicken is tender (45-60 min).
  5. Cold.
  6. Bone chicken and cut into bite-size pcs.
  7. Cover long rice with hot water and let stand 1/2 hour, drain and cut in 4 inch lenths.
  8. Remove ginger from broth.
  9. Add in long rice, green onion, remaining salt, pepper and chicken.
  10. Bring to a boil and simmer 10 min.
  11. Garnish with additional minced onion, if you like.
  12. Serves 8-10.
