Meat Loaf With Creole Sauce Recipe

  1. Combine all the ingredients for the meat loaf.
  2. Mix and blend well to a smooth consistency.
  3. Place into a greased loaf pan.
  4. Smooth top.
  5. Bake at 350 degrees for about 1 hour.
  6. Sauce: Heat butter in saucepan.
  7. Add in green pepper, onion, and mushroom.
  8. Saute/fry but do not brown the onions.
  9. In another bowl, mix cornstarch with a little of the tomato juice.
  10. Add in remaining tomato juice to pan with pepper-mushroom mix.
  11. Return to heat and bring to a boil.
  12. Add in cornstarch mix; stir well.
  13. Add in pepper sauce, thyme leaves, salt, and green onion.
  14. Bring to a boil.
  15. Boil for 1 to 2 min till sauce thickens.
  16. Serve with the meat loaf.
