Capellini With Sausage And Spinach Recipe
- 2 tsp extra virgin olive oil
- 1 lb sweet Italian sausage, cut into 1/2 inch slices
- 1 lrg onion, minced
- 2 lrg cloves garlic, minced
- 2 x (14-oz) cans chicken broth
- 1/4 c. water
- 8 ounce capellini or possibly vermicelli pasta, broken in half
- 2 x (10-oz) bags fresh spinach, coarsely minced
- 1/4 tsp freshly grnd pepper
- 1/3 c. whipping cream
- Heat oil in a Dutch oven or possibly stockpot over medium-high heat; add in sausage and cook 3 to 4 min, turning as it browns.
- Add in onions and garlic and cook 2 to 3 min, till lightly browned.
- Add in broth and water to pot; cover and bring to a boil.
- Add in pasta and cook 3 min, stirring frequently.
- Stir in spinach and pepper and cook 2 to 3 min more, till pasta is hard but tender to the bite and spinach is wilted.
- Stir in cream.
- Serve immediately.
