Classic Black Beans

  1. Put the beans in a large saucepan.
  2. Add the onion, carrot, garlic, bay leaf and water and bring to a boil.
  3. Simmer over moderately low heat until tender, about 1 hour.
  4. Season the beans with salt 10 minutes before they are done.
  5. Drain the beans.
  6. Discard the onion, carrot, garlic and bay leaf and serve.
