Turkey With Eggplant

  1. Cover eggplant with boiling
  2. water; let stand 5 minutes and drain well.
  3. Dredge
  4. turkey meat in mixture of cornstarch, soy sauce and sherry.
  5. Heat pan; add oil and saute hot peppers until they turn color.
  6. Remove
  7. from pan.
  8. Saute turkey in the same pan until done.
  9. Add
  10. eggplant,
  11. garlic, sauteed peppers, ginger and soup stock.
  12. Heat thoroughly.
  13. Makes 6 servings.
