Turkey With Eggplant
- 1 eggplant, cut in shoestring strips
- boiling water
- 1 lb. turkey breast steak, cut in strips
- 1 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 1 Tbsp. sherry wine
- 4 Tbsp. oil
- 5 hot peppers, shredded fine
- 1 small clove garlic, chopped fine
- 1 Tbsp. fresh ginger, chopped
- 1/2 c. chicken stock
- Cover eggplant with boiling
- water; let stand 5 minutes and drain well.
- Dredge
- turkey meat in mixture of cornstarch, soy sauce and sherry.
- Heat pan; add oil and saute hot peppers until they turn color.
- Remove
- from pan.
- Saute turkey in the same pan until done.
- Add
- eggplant,
- garlic, sauteed peppers, ginger and soup stock.
- Heat thoroughly.
- Makes 6 servings.
