Cranberry and Feta Salad with Dijon Vinaigrette
- Dijon Vinaigrette
- 3/4 cup balsamic vinegar
- 6 Tbsp. honey
- 2 Tbsp. GREY POUPON Classic Dijon Mustard
- 1-1/2 tsp. ground black pepper
- 1-1/2 cups olive oil
- Cranberry and Feta Salad
- 2-1/2 gal. torn mixed salad greens
- 1-1/2 qt. dried cranberries
- 1-1/2 qt. crumbled feta cheese
- 3 cups coarsely chopped walnuts, toasted
- Dijon Vinaigrette: Beat vinegar, honey, mustard and pepper with whisk until blended.
- Gradually add oil, beating well after each addition.
- Refrigerate until ready to use.
- Salad: Combine ingredients.
- Refrigerate until ready to use.
- For each serving: Toss 2 cups Salad with 1-1/2 Tbsp.
- Dijon Vinaigrette.
