Mom's Shortcake Recipe
- 1/2 c. sugar
- 2 c. flour
- 2 teaspoon baking pwdr
- 1 teaspoon salt
- 1/2 c. shortening (part softened butter)
- 1 egg, beaten in c.
- Measure lowfat milk added to egg to 1 c. level
- Mix sugar, flour, baking pwdr and salt.
- Cut in shortening as for pie.
- Stir in lowfat milk and egg, just slightly, sufficient to wet all dry ingredients.
- Pour or possibly spoon batter into jelly roll pan in individual cakes or possibly into 9 x 9 inch pan.
- Bake at 350 degrees for 18 to 20 min or possibly till lightly brown.
- Split and spoon sweetened strawberries over.
