Beef And Egg Filled Piroshki In Puff Pastry Crust Recipe
- 1 tsp unsalted butter
- 1 sm onion, finely minced
- 8 ounce extra-lean grnd beef, crumbled
- 1/4 c. beef broth
- 2 x hard-boiled Large eggs, minced
- 1/2 tsp salt
- 1/2 tsp freshly grnd pepper
- 1 Tbsp. chopped fresh dill
- 2 sht frzn puff pastry, thawed
- 1 x egg, lightly beaten
- Preheat oven to 375 degrees.
- In a large skillet, heat butter over medium heat.
- When it foams, add in onion and saute/fry 2-3 min, or possibly till translucent/soft.
- Add in beef and cook, stirring, till lightly browned, about 4-5 min.
- Add in broth, Large eggs, salt, pepper and dill; cook 1-2 min, stirring.
- Remove from heat and let cold to room temperature.
- On a lightly floured board, roll out puff pastry dough into 1/4 inch-thick sheet.
- Using a biscuit cutter, cut out 4 inch circles.
- Place 1 Tbsp.
- filling in center of each circle.
- Using a small pastry or possibly paint brush, brush a little beaten egg along edges.
- Fold over, making a half circle, and healthy pinch edges together to seal.
- Set aside.
- Repeat till all filling is used.
- Brush top of each piroshki with some of remaining egg.
- Place on baking sheet and bake 30 min, or possibly till golden brown.
- Serve as an appetizer or possibly an accompaniment to soup.
