Mammy's Shrimp Gumbo

  1. Make a roux with bacon grease and flour.
  2. Be careful not to get it too dark.
  3. A light brown roux tastes best in my opinion.
  4. Add onion, celery and bell pepper.
  5. Cook on low to soften them up a bit.
  6. Add okra and cook for about 20 minutes.
  7. Add tomatoes and about 5 cups of water.
  8. Cook 40 minutes.
  9. Add shrimp.
  10. Cook for an additional 20 minutes.
  11. Add green onion tops, and cook 10 minutes.
  12. Serve over white rice.
