Greek-Style Lemon Chicken
- 1 Tbsp. oil
- 1 lb. boneless skinless chicken breasts, cut into strips
- 2 cloves garlic, minced
- 2 cups MINUTE White Rice, uncooked
- 1 can (14-1/2 oz.) chicken broth
- 1/2 cup grated carrots Target 2 lb For $3.00 thru 02/06
- 1/4 cup sliced pitted ripe olives
- 1 Tbsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
- 1 Tbsp. parsley flakes
- Heat oil in large nonstick skillet on medium-high heat.
- Add chicken; cook and stir 6 to 8 minutes or until chicken is cooked through, adding garlic for the last 3 minutes of the cooking time.
- Add remaining ingredients; stir until well blended.
- Bring to boil; cover.
- Remove from heat.
- Let stand 5 minutes.
