Spicy Penne, Kielbasa and Asparagus W/ Blue Cheese Tomato Sauce
- 1 (13 ounce) box penne, prepared according to package directions (I always use Dreamfields Low Carb penne)
- 34 cup marinara sauce
- 1 teaspoon garlic, minced
- 12 teaspoon mrs. dash chipotle sodium-free seasoning (or something similar)
- 12 teaspoon crushed red pepper flakes
- 12 teaspoon dried dill
- 4 green onions, finely chopped (tops only)
- 1 lb fresh asparagus, cut into 1/2-inch pieces
- 12 cup sweet vermouth cooking wine (or sub white grape juice)
- 2 tablespoons lemon juice, to taste
- 14 cup chicken broth
- 1 lb kielbasa, sliced into coins and then cut in half
- 12-1 tablespoon tomato paste (optional)
- 14 cup blue cheese, crumbles
- Prepare pasta according to package directions, if you haven't already done so.
- Keep warm if cooking now.
- Heat a large pan over Medium heat.
- Add marinara sauce, garlic, Mrs.
- Dash Chipotle seasoning, red pepper flakes, dill and green onions.
- Heat to boiling stirring frequently to keep from scorching.
- After it starts boiling, add asparagus, sweet vermouth, lemon juice and chicken broth.
- Stir to combine.
- Increase heat to Medium-High until the mixture boils.
- Continue cooking for 5 minutes.
- Add kielbasa and stir to combine.
- Cook another 5 minutes or until the kielbasa is heated through.
- If the sauce seems to watery, add tomato paste and stir until it gets to the consistency that you prefer, but make sure that you add another splash of lemon juice to even out the flavor.
- After getting the sauce to the preferred consistency, stir in blue cheese crumbled and continue stirring until they melt into the sauce.
- If pasta was precooked, warm it up and stir it into the kielbasa/asparagus mixture right before serving.
