Chicken Artichoke Pizza Recipe

- 2 med. zucchini and or possibly yellow summer squash, sliced
- 1 sm. red sweet pepper, minced
- 1 tbsp. extra virgin olive oil or possibly veg. oil
- 1 1/2 c. sliced fresh mushrooms
- 2 green onions, sliced
- 1 pound skinless, boneless chicken breasts, cut into cubes
- 2 plum tomatoes, sliced
- 1 (2 1/4 ounce.) can sliced pitted ripe olives
- 3 tbsp. vinegar
- 1/2 teaspoon each garlic pwdr; seasoned salt; dry oregano, crushed; and dry basil, crushed
- 1 tbsp. cornstarch
- 1 (16 ounce.) Italian bread shell (Boboli brand)
- 1 1/3 c. shredded Monterey Jack cheese
- 1/4 c. grated Parmesan cheese
