Jenny's Spinach Balls
- 2 each 10 oz. packages of frozen spinach, thawed.
- 1 cup Parmesan cheese, firmly packed.
- 2 cup Pepperidge Farm Herb stuffing mix, crushed.
- 1/2 cup Butter, melted.
- 4 each Green Onions, chopped.
- 3 each Eggs
- 1 dash Nutmeg, optional.
- Preheat oven to 350.
- Thaw and drain spinach well.
- Combine all ingredients in a large bowl, and mix thoroughly.
- Shape into one inch balls.
- Place balls on an ungreased baking sheet, and cook for 10-15 mins.
- Serve with Dijon Mustard.
