Blackened Tilapia PoBoy Wrap

  1. Preheat grill or oven to 400 degrees F.
  2. Mix together cajun boil, paprika, and crushed fennel seeds.
  3. Rub each tilapia filet with 1/2 teaspoon olive oil, then liberally rub in half of the seasoning mixture into each fillet (both sides).
  4. Wrap each filet with a double layer of aluminum foil.
  5. Place fillets on grill or in the oven for 12-15 minutes, until fish is flaky.
  6. While fish is cooking, whisk together aioli ingredients and place into the refrigerator until ready to use.
  7. To serve, place 2 lettuce leaves into the middle of a tortilla.
  8. Spoon on 1 tablespoon aioli onto the leaf, then top with a cooked fillet.
  9. Sprinkle with chopped tomatoes and an additional 1 tablespoon aioli.
  10. Wrap tortilla around ingredients and serve!
