Pistachio Pesto
- 2 c. Parsley
- 1 c. roasted, salted shelled pistachios
- 1/4 c. grated Pecorino cheese
- 1 clove garlic
- 1/4 tsp. salt
- .13 tsp. Pepper
- .67 c. Extra virgin olive oil
- 1 lb. grilled shrimp
- 1 lb. cooked pasta (optional, instead of shrimp)
- In food processor, pulse parsley, pistachios, Pecorino cheese, garlic, salt, and pepper until combined.
- With processor running, add olive oil until smooth.
- Serve with grilled shrimp or cooked pasta.
