Chicken Cacciatore(Country: Italian)
- 1/2 c. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 1/2 lb. chicken, cut up
- 1/4 c. olive oil
- 1 (16 oz.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 c. sliced mushrooms
- 1/4 c. water
- 1/4 c. sliced pitted ripe olives
- 1 medium onion
- 2 cloves crushed garlic
- 1 tsp. salt
- 1 tsp. crushed oregano leaves
- 1/4 tsp. pepper
- 1 bay leaf
- parsley
- whole wheat pasta, cooked
- Mix flour, 1 teaspoon salt and 1/4 teaspoon pepper.
- Coat chicken with flour mixture.
- Heat oil in a large skillet.
- Cook chicken over medium heat until brown (approximately 15 minutes on each side).
- Drain fat from skillet.
