Potato Pancake and Bologna Supper
- 2 packages (14 To 16 Oz. Package) Ring Of Bologna
- 1 cup Pancake Mix
- Enough Water To Add To Pancake Mix To Create A Batter
- 1 whole Small Onion
- 1 pound Shredded Hashbrown Potatoes
- Put bologna in a large pot and boil it for a few minutes while you prepare the batter.
- While the bologna is cooking, add pancake mix to a large bowl.
- Add enough water to get batter to a nice consistency (use the water amount specified by the package).
- Dice or shred onion into tiny pieces and put in the bowl with the batter.
- Add shredded potatoes to the bowl.
- Mix well and get everything nicely coated.
- Turn your electric skillet to 350 degrees F and spray with butter flavored cooking spray.
- At this point you want to turn off the heat for the bologna and just let it sit in the warm water for a bit.
- When skillet is hot, add a scoop of the potato mixture and push potatoes out, so you get a nice thin pancake.
- Thick potato pancakes are BAD!
- When done, place all your potato pancakes on a platter and add the bologna to the platter.
- Note: People either like their potato pancakes sweet (with maple syrup or jam) or savory with sour cream.
