Crab Chowder With Snow Peas
- 2 cups clam juice
- 2 12 cups water
- 12 cup long grain rice
- 2 scallions, sliced
- 1 tablespoon minced gingerroot
- 2 (4 ounce) cans crabmeat
- 2 cups snow peas, halved crosswise
- 1 tablespoon dry sherry
- 12 cup milk
- 2 cups torn sorrel
- salt and pepper
- Heat clam juice and water to boiling in a large saucepan.
- Stir in rice, scallions and gingerroot; reduce heat and simmer, covered, until the rice is tender; about 20 minutes.
- Stir in crabmeat and snow peas; simmer for 1 minute.
- Stir in sherry, milk and sorrel.
- Season to taste with salt and pepper.
