Chocolate Chip Muffins
- 200 grams Pancake mix
- 100 grams Butter (or margarine)
- 70 ml Milk
- 2 Eggs
- 3 tbsp Sugar
- 1 dash Vanilla extract
- 100 grams Chocolate chips
- Bring the butter to room temperature.
- Preheat the oven for 180C.
- Add butter and sugar into a bowl, and mix well until the mixture becomes white.
- Next, mix in the beaten eggs in 3 batches.
- Add vanilla extract as well.
- Add the pancake mix in Step 3, and mix well.
- Pour in the milk, and make the mixture smooth.
- Set 15 g of chocolate chips aside for decorating at the end.
- Add the remaining chocolate chips to Step 5, and fold them in.
- Pour the Step 6 batter into muffin cups to 70% full, and sprinkle the reserved chocolate chips.
- Bake in the oven preheated to 180C for about 20 minutes while checking on them occasionally.
