Chocolate Chip Muffins

  1. Bring the butter to room temperature.
  2. Preheat the oven for 180C.
  3. Add butter and sugar into a bowl, and mix well until the mixture becomes white.
  4. Next, mix in the beaten eggs in 3 batches.
  5. Add vanilla extract as well.
  6. Add the pancake mix in Step 3, and mix well.
  7. Pour in the milk, and make the mixture smooth.
  8. Set 15 g of chocolate chips aside for decorating at the end.
  9. Add the remaining chocolate chips to Step 5, and fold them in.
  10. Pour the Step 6 batter into muffin cups to 70% full, and sprinkle the reserved chocolate chips.
  11. Bake in the oven preheated to 180C for about 20 minutes while checking on them occasionally.
