Zucchini Wedges Roasted and Wrapped in Bacon

  1. Preheat oven to 425 degrees F.
  2. In a bowl, add zucchini wedges, lemon juice, salt, pepper, and onion powder.
  3. Stir gently to evenly coat wedges.
  4. One by one, wrap half a slice of bacon around a zucchini wedge and transfer to a nonstick rimmed baking sheet.
  5. Repeat until all wedges are wrapped.
  6. Lay then on the baking sheet in a single layer and roast 15 minutes.
  7. Remove to paper towels to absorb excess bacon fat.
  8. Plate and serve.
  9. I love these served with a sour cream, chive and hot sauce for dipping.
  10. You can use any type of dipping sauce you like.
  11. Ranch dressing works well.
