Zucchini Wedges Roasted and Wrapped in Bacon
- 3 whole Zucchini, Peeled, Cut Into Wedges
- 2 Tablespoons Sweetened Lemon Juice Concentrate (bottled)
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Onion Powder
- 12 ounces, weight Bacon, Sliced In Half
- Preheat oven to 425 degrees F.
- In a bowl, add zucchini wedges, lemon juice, salt, pepper, and onion powder.
- Stir gently to evenly coat wedges.
- One by one, wrap half a slice of bacon around a zucchini wedge and transfer to a nonstick rimmed baking sheet.
- Repeat until all wedges are wrapped.
- Lay then on the baking sheet in a single layer and roast 15 minutes.
- Remove to paper towels to absorb excess bacon fat.
- Plate and serve.
- I love these served with a sour cream, chive and hot sauce for dipping.
- You can use any type of dipping sauce you like.
- Ranch dressing works well.
