Grilled Chicken Sandwich with Caramelized Onions & Gorgonzola Cream Sauce

  1. Preheat grill to medium-high heat.
  2. Season chicken with a little olive oil, salt and pepper to taste.
  3. Place on the grill and cook for 7-8 minutes per side or until juices run clear.
  4. Transfer to a plate and let rest.
  5. In a large skillet, heat butter over medium heat.
  6. Throw in onions and saute for about 8 minutes or until browned and tender.
  7. Reduce heat to simmer and add in cream, stirring frequently.
  8. Let reduce by half and thicken up, about 5 minutes.
  9. Stir in cheese until well-combined and melted in.
  10. Place chicken on a roll and top with onion cheese sauce.
  11. Serve immediately.
  12. Optional: lightly butter the rolls and place on the grill (buttered side down) for 1-2 minutes or until they become lightly crisped and warm.
