Gourmet Vegetable Salad

• 2 large carrots (grated)
• 12 cucumber (minced)
• 12 lemon, juice of
• 14 teaspoon salt
• 6 cherry tomatoes (halved)
• 3 cups baby spinach leaves
• 12 cup purple cabbage (shredded)
• 12 zucchini (yellow, grated)

1. combine all ingredients except for spinach and toss.
2. arrange spinach on 6 plates and top with salad mixture.
