Shrimp Linguine

  1. Bring a large pot of lightly salted water to a boil.
  2. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  3. Place bacon in a large, deep skillet.
  4. Cook over medium-high heat until evenly brown.
  5. Drain, crumble, and set aside.
  6. Heat olive oil in a large skillet over medium heat.
  7. Saute garlic, basil, and oregano in oil for 1 minute.
  8. Stir in tomatoes and green onions, and saute for 3 minutes.
  9. Add bacon, half and half, Parmesan cheese, and Monterey Jack cheese.
  10. Cook until cheese is just melted.
  11. Stir in shrimp, and cook until heated through, about 2 minutes.
  12. Serve sauce over pasta, and sprinkle with pine nuts.
