Pork Medallion with Caramelized Onions and Fennel
- 1 pound Pork Tenderloin, Cut Into Medallions
- 1 cup Onion, Sliced Thin
- 1 whole Fennel Bulb, Thinly Sliced Or Diced
- 1/4 cups Apple Juice
- 1 pinch Dried Rosemary
- Salt And Pepper, to taste
- Sprinkle pork with salt and pepper.
- In a large skillet over medium high heat, add pork.
- Sear each side of the pork for about 4 minutes, until all sides are no longer pink.
- Take the pork out of the skillet and place on a plate and cover with aluminium foil.
- Meanwhile in the same pan you seared the pork in, add onions, fennel, apple juice and rosemary.
- Cook until softened, about 5 minutes.
- Add pork back to the skillet and cover the skillet.
- Cook for about 7 minutes, until pork is cooked through.
- Place pork on a plate and top with onion and fennel mixture.
