Pork Medallion with Caramelized Onions and Fennel

  1. Sprinkle pork with salt and pepper.
  2. In a large skillet over medium high heat, add pork.
  3. Sear each side of the pork for about 4 minutes, until all sides are no longer pink.
  4. Take the pork out of the skillet and place on a plate and cover with aluminium foil.
  5. Meanwhile in the same pan you seared the pork in, add onions, fennel, apple juice and rosemary.
  6. Cook until softened, about 5 minutes.
  7. Add pork back to the skillet and cover the skillet.
  8. Cook for about 7 minutes, until pork is cooked through.
  9. Place pork on a plate and top with onion and fennel mixture.
