High-Protein Chicken Salad
- 1 lb cooked chicken breast or rotisserie chicken, shredded
- 1/2 cup red onion, diced
- 1/2 cup sweet apple, diced (red or green)
- 2/3 cup grapes, quartered or halved (red or white)
- 2/3 cup dried cranberries (or craisins)
- 1/2 cup chopped walnuts (or nut of choice)
- 2/3 cup plain 2% Greek yogurt
- 2 tbsp fresh lemon juice (or more to taste)
- 1/2 tsp garlic powder
- 6 medium lettuce leaves
- In a large bowl, combine all ingredients.
- Mix until well combined.
- Using a 3/4 cup measuring scoop, portion out the chicken salad onto lettuce leaves.
