Imitation Crab Salad Summer Rolls
- 8 Imitation crab sticks
- 1/2 Cucumber
- 2 leaves Lettuce
- 20 grams Cellophane noodles
- 4 Spring roll wrappers (rice paper wrappers)
- 1 See Multi-Purpose! Chinese-style Dressing
- Julienne the cucumber.
- Soak the harusame noodles in boiling water for 5 minutes, and drain well.
- Shred the lettuce leaves to the same length as the crabsticks.
- I bought the rice paper wrappers at the Chinese section of the supermarket.
- Put lukewarm water into a large bowl, and soak the wrappers.
- They become soft in 1-2 minutes.
- Put lettuce, cucumber, harusame noodles and 2 crabsticks on a wrapper.
- Fold the near end of the wrapper over the fillings.
- Fold in both sides of the wrapper.
- Roll up as shown.
- Cut each roll in half, and they're done!
- Serve with a dressing of your choice.
- You can also wrap shrimp, salmon, ham, steamed chicken, or whatever you like.
