Margarita Chicken & Rice Skillet

  1. Heat 2 Tbsp.
  2. dressing in large nonstick skillet on medium-high heat.
  3. Add chicken; cook 4 to 6 min.
  4. on each side or until golden brown on both sides.
  5. Remove from skillet.
  6. Add peppers and onions to skillet; cook and stir 5 min.
  7. or until crisp-tender.
  8. Add broth, rice, lime zest, juice, cumin and remaining dressing to skillet; stir.
  9. Bring to boil.
  10. Top with chicken; cover.
  11. Simmer on medium-low heat 25 to 30 min.
  12. or until chicken is done (170 degrees F) and rice is tender.
  13. Remove from heat.
  14. Let stand, covered, 5 min.
  15. Sprinkle with cilantro.
