Margarita Chicken & Rice Skillet
- 1/3 cup Kraft Zesty Italian Dressing, divided
- 1 chicken (3 lb./1.4 kg), cut into 8 pieces
- 1 red pepper, chopped
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 4-1/4 cups 25%-less-sodium chicken broth
- 3 cups long-grain white rice, uncooked
- 2 tsp. zest and 2 Tbsp. juice from 2 limes Safeway 3 ct For $1.00 thru 02/09
- 1/2 tsp. ground cumin
- 2 Tbsp. chopped fresh cilantro
- Heat 2 Tbsp.
- dressing in large nonstick skillet on medium-high heat.
- Add chicken; cook 4 to 6 min.
- on each side or until golden brown on both sides.
- Remove from skillet.
- Add peppers and onions to skillet; cook and stir 5 min.
- or until crisp-tender.
- Add broth, rice, lime zest, juice, cumin and remaining dressing to skillet; stir.
- Bring to boil.
- Top with chicken; cover.
- Simmer on medium-low heat 25 to 30 min.
- or until chicken is done (170 degrees F) and rice is tender.
- Remove from heat.
- Let stand, covered, 5 min.
- Sprinkle with cilantro.
